Today my mom had planned to make pol rotti for our dinner.I thought It gets so bored eating rotti as same way in everytime.So I wanted to do some changes to pol rotti.I hadn't known whether it's got succeed or not. However I love accept challenges. So I tried it as I want.Finally I could prepare more delicious as well as more nutritious vege rotti with different shapes. I know my shapes are teeny weeny bit wonky, hahaha! But it's not necessary to getting perfect shape, doesn't it?๐
Now you can go through this my novel recipe๐
Ingredients :
Wheat flour 2 cups
Finely sliced red onion 5
Curry leaves sprig 2
Salt 1 tablespoon
Thinly grated coconut 1 cup
Boiled potatoes 200g
Finely sliced Bell pepper (medium) 1
Finely sliced green beans 5
Handful of Shredded cabbage
Finely grated Carrot (medium) 3
Minced Spring onion 5
Finely sliced Onion (medium) 1
Butter 2 tablespoons
Water 1/2 cup
Oil as needed

Instructions :
Smash boiled potatoes well.
Take a pan & heat it with butter for few seconds then add sliced green chillies, onions, grated carrot, Finely sliced onion, Shredded cabbage, minced spring onion, sliced green beans,, sliced bell peeper, sliced curry leaves together.Stir well until it gets tempered better enough.

Add grated coconut into the sifted flour along with salt & tempered mixture.start kneading the dough with mixture.Continue kneading until form a soft dough while gradually adding water.After forming dough balls correctly it shouldn't be sticked to the edges of bowl or hands.

Then apply oil to hands & make circle shapes on lightly oiled surface.
Today I've used different type of shapes other than the circle (torties, butterfly & aeroplane). I thinks it's more suitable for our lil kiddos who unlike to eat rotti.

After making shapes then take a flat pan or skillet & apply little bit of oil then place it over medium heat.Afterwards transfer a roti from oliy surface & place on pan to cook.For one side of roti it takes about 2-3 minutes.Flip over it to cook other side also.As this way you can cook more roti.

Finally you can serve them along with your favourite curry (I chose salmon curry) & spicy lunumiris.Or someone who doesn't like to spicy taste there's an option.Slathering of jam, butter & banana.Who can escape from this.๐
