Roasted coconut - pumpkin curry
Ingredients :
*For curry*
Young pumpkin 300g
Turmeric powder 1/2 tea spoon
Salt 1 tea spoon
Red dry chilli pod 4
Mustard seed 1tea spoon
Cumin seed 1/4 tea spoon
Red onion 6
Garlic cloves 3
Curry leaves sprig 3
Chilli pieces 1 tea spoon
dhal 1 table spoon
Lime juice to taste
Green chilli pod 3
Thinly grated fresh coconut cup 1
Thinly sliced onion medium 1
Cooking oil 1 1/2 table spoon
Instructions
*Wash & cut pumpkin into cubes, it's better as small cubes.Don't peel because it's vibrant color gives perfect appearance for the dish.Add onion & turmeric powder into pumpkin cubes & then boil.Don't boil it more. Stop after about 80% of boiling. Strain water & now pumpkin cubes should not be stick each other.
Take a small fry & heat with added coconut oil.After few seconds add Mustard seeds, cumin seeds just after spluttering mustard seeds add red dry chilli pieces along with sliced red onions & minced garlic.Then saute for 2 minutes. Afterwards add sliced green chillies along with curry leaves & saute another minute.Add chilli pieces & salt then stir well.Add grated coconut & stir again.
Pumpkin is a delicious vegetable & low in calories. it provides carotene and then boost Vitamin A in body. But some people don't like to eat pumpkin as a normal curry.
In this quarantine period, home gardening is a better way to plant vegetables & get more healthier food in our own garden.So we can plant seeds for getting pumpkins.

After 2 minutes add cubed pumpkin, stir. Add salt to taste.Then simmer for 5 minutes till pumpkins are soft enough.Finally add lime juice to taste.Then serve your delicious pumpkin curry.
